    Prepare the Pudding Mixture

    In a large mixing bowl, whisk together the eggs and sugar until well combined and slightly frothy. Gradually add in the milk, heavy cream, vanilla extract, yuzu juice, and sansho pepper. Mix until smooth.

    Strain the Mixture

    Pour the mixture through a fine mesh strainer into another bowl to ensure a silky smooth texture.

    Prepare the Baking Dish

    Preheat your oven to 160°C (320°F). Pour the strained pudding mixture into individual ramekins or a baking dish.

    Bake the Pudding

    Place the ramekins or baking dish in a larger baking tray filled with hot water (bain-marie). Bake in the preheated oven for about 45-50 minutes, or until set but still slightly jiggly in the center.

    Cool and Chill

    Remove the pudding from the oven and allow to cool at room temperature. Once cooled, refrigerate for at least 2 hours before serving.
