Prepare the Eggplant
Preheat your smoker to 225°F (107°C). Cut the eggplants in half lengthwise and score the flesh with a knife in a crisscross pattern. This helps the smoke penetrate the eggplant.

Prepare the Bread
While the eggplant is smoking, preheat your oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces and arrange them on a baking sheet.

Assemble the Dish

Combine and Serve
Once the eggplant has cooled, scoop out the flesh and mix it with dengaku miso. Spoon the mixture back into the eggplant skins. Sprinkle with sesame seeds and chives (if using). Serve with the toasted baguette points.
