Prepare the Brisket

    Smoke the Brisket

    Season the brisket with salt and pepper. Smoke in a smoker at 225°F for about 6-8 hours until tender.

    Prepare the Jalapeños

    Roast the smoked jalapeños over an open flame or grill until charred, then chop them finely.

Cook the Noodles

    Boil the Noodles

    Bring a large pot of salted water to a boil. Cook the tsukemen noodles according to package instructions until al dente. Drain and rinse under cold water.

Assemble the Dish

    Combine Ingredients

    In a large bowl, mix the chili oil, chopped smoked jalapeños, and a bit of the brisket juices. Toss the cooked noodles in this mixture.

    Serve

    Plate the noodles and top with sliced brisket, menma, and halved ajitama eggs. Serve with a small bowl of dipping sauce made from the brisket juices.
