    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes. Poke several holes in each potato with a fork. Rub them with olive oil, and sprinkle with salt and pepper.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45 minutes, or until they are tender when pierced with a fork. Remove them from the oven and let cool slightly.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Prepare the Sour Cream

    In a small bowl, mix the sour cream with the chipotle sauce. Adjust the seasoning with salt and pepper to taste.

    Scoop and Fill

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out most of the flesh, leaving a small border around the skin. Place the skins on a baking sheet.

    Add Cheese and Bacon

    Fill each potato skin with crumbled bacon and a generous amount of cheddar cheese.

    Final Bake

    Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and top with chopped scallions. Serve warm with chipotle sour cream on the side.
