Prepare the Pork
In a small bowl, mix together smoked paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Rub this spice mixture all over the pork shoulder.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Combine apple cider vinegar and water in a separate bowl, then pour over the pork. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shredded.

Shred the Pork
Remove the pork from the slow cooker and let it rest for a few minutes. Use two forks to shred the meat into bite-sized pieces.

Assemble the Sandwich
Toast the slices of white bread if desired. Place a generous mound of pulled pork on each slice. Top with coleslaw and drizzle with BBQ sauce if using.

Serve the pulled pork sandwiches immediately, with extra BBQ sauce on the side if desired.
