Ice Cream Base

Ice Cream Preparation

    Prepare the Base

    In a saucepan, combine heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is hot but not boiling.

    Mix Egg Yolks

    In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks, whisking continuously to temper the yolks.

    Combine Mixtures

    Pour the yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Chill the Base

    Remove from heat, stir in vanilla extract, and allow the mixture to cool. Once cooled, cover and refrigerate for at least 4 hours or overnight.

    Prepare Bacon and Walnuts

    While the base is chilling, cook the bacon in a skillet until crispy. Remove from heat, crumble, and set aside. In the same skillet, toast the walnuts until golden.

    Churn the Ice Cream

    Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions. Near the end of churning, add the crumbled bacon and toasted walnuts.

    Add Maple Flavor

    Once the ice cream is churned, swirl in maple syrup to taste. Transfer to a container and freeze until firm.
