Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the egg and water. Mix until it forms a rough dough.

  2. 2

    Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

  1. 3

    Prepare the Filling

In a medium bowl, combine ground pork, chopped green onions, minced garlic, soy sauce, sesame oil, ground ginger, salt, and pepper. Mix well until fully combined.

Assembly

  1. 4

    Roll out the Dough

After resting, divide the dough into four pieces. Roll out one piece on a floured surface until thin (about 1/16 inch). Cut into 3-inch squares.

  2. 5

    Fill the Won-Tons

Place about 1 teaspoon of the filling in the center of each square. Fold the dough over the filling to create a triangle and seal the edges by pressing firmly.

  3. 6

    Shape the Won-Tons

Take the two opposite corners of the triangle and bring them together to form a shape resembling a flower. Pinch to seal.

Cooking

  1. 7

    Boil or Fry the Won-Tons

In a large pot, bring water to a boil. Add the won-tons in batches and boil for about 3-4 minutes until they float to the surface. Alternatively, heat oil in a pan and fry until golden brown.

Dipping Sauce Preparation

  1. 8

    Make the Dipping Sauce

In a small bowl, mix together soy sauce, rice vinegar, chili oil, and chopped green onions. Serve alongside the won-tons.
