Preparation of String Beans
1. Wash and Trim
Rinse the string beans under cold water to remove any dirt or impurities. Trim the ends of the string beans to prepare them for frying.
Batter Preparation
2. Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.
3. Add Ice Water
Slowly pour in the ice water while whisking the dry ingredients to form a smooth batter. Be careful not to overmix; a few lumps are okay.
Frying
4. Heat Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.
5. Coat String Beans
Dip each string bean in the batter, ensuring they are fully coated, and let the excess batter drip off.
6. Fry String Beans
Carefully place the battered string beans in the hot oil, a few at a time, to avoid overcrowding. Fry them for about 2-3 minutes or until they are golden brown and crispy.
7. Drain Excess Oil
Using a slotted spoon, remove the fried string beans from the oil and place them on a plate lined with paper towels to absorb any excess oil.
Serving
8. Plate and Serve
Arrange the fried string beans on a serving plate. Serve immediately while hot and crispy, with your choice of dipping sauce.
