Preparation of Shrimp

Clean the Shrimp

Peel and devein the shrimp, leaving the tails intact. Rinse them under cold water and pat dry with paper towels.

Make a Small Cut

Make a small cut along the belly of each shrimp to help them stay straight while frying.

Batter Preparation

Mix Dry Ingredients

In a bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.

Add Wet Ingredients

In another bowl, beat the egg and then add the ice cold water. Mix well, then pour this mixture into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.

Frying

Heat the Oil

In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Shrimp

Dip each shrimp into the batter, ensuring it is fully coated.

Fry the Shrimp

Carefully place the battered shrimp into the hot oil, a few at a time, without overcrowding the pot. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Shrimp

Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil.

In a small bowl, mix together the soy sauce, rice vinegar, mirin, and grated daikon radish until well combined.
