    Prepare the Vegetables

    Wash and slice all the vegetables: broccoli, carrot, bell pepper, zucchini, snap peas, and mushrooms, and set them aside.

    Make the Sauce

    In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, minced ginger, honey (or maple syrup), and red pepper flakes until well combined.

    Sauté the Vegetables

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced vegetables (broccoli, carrot, bell pepper, zucchini, snap peas, and mushrooms) and sauté for about 5-7 minutes, stirring frequently, until they are tender but still crisp.

    Add Sauce

    Pour the sauce over the sautéed vegetables and stir well to coat. Cook for an additional 2-3 minutes until the sauce is heated through.

    Assemble the Donburi

    Divide the cooked rice among serving bowls. Top each bowl with the sautéed vegetables and drizzle any remaining sauce over the top.

    Garnish

    Sprinkle sesame seeds and sliced green onions over the assembled vegetable donburi before serving.
