Prepare the Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.
Prepare the Hosomaki

Lay Out the Nori Sheet
Place the nori sheet shiny side down on a bamboo sushi mat or a clean surface.

Add the Sushi Rice
Wet your hands to prevent sticking, then take about 1/2 cup of the seasoned sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge empty.

Place about 2 tablespoons of umeboshi evenly across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to form a tight roll. Continue rolling until the nori edge seals against the rice.

Using a sharp knife, wet the blade and slice the roll into 6 equal pieces, wiping the knife clean between cuts to ensure clean edges.
