    Clean the Tripe

    Rinse the beef tripe thoroughly under cold water to remove any impurities. Cut it into bite-sized pieces and place it in a large pot.

    Sauté Aromatics

    In a separate large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Vegetables

    Add the chopped carrots and celery to the pot with the onions and garlic. Sauté for another 5 minutes until the vegetables start to soften.

Cooking the Stew

    Combine Ingredients

    Stir in the tomato paste until well combined, then add the diced tomatoes, beef broth, and cleaned tripe. Mix thoroughly.

    Season the Stew

    Add the bay leaves, salt, and black pepper to the mixture. Bring the stew to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low and cover the pot. Let simmer for 2 to 3 hours, stirring occasionally, until the tripe is tender.

    Finishing Touches

    Once the tripe is tender, remove the bay leaves. Taste and adjust seasoning with more salt and pepper if needed. Stir in the chopped parsley before serving.
