Method

Preparing the Tonkatsu

    Season the Pork

    Sprinkle the pork loin chops with salt and black pepper on both sides. Let them sit for about 10 minutes to absorb the seasoning.

    Bread the Pork

    Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow dishes. Dredge each pork chop in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs, ensuring an even coating.

    Fry the Tonkatsu

    In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the breaded pork chops and fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Making the Curry Sauce

    Prepare the Vegetables

    Peel and chop the onion, carrots, and potato into bite-sized pieces. Mince the garlic and grate the ginger.

    Cook the Vegetables

    In a large pot, add a splash of oil and sauté the onion, garlic, and ginger over medium heat until the onion is translucent. Then add the carrots and potatoes, cooking for an additional 5 minutes.

    Add Liquid and Seasonings

    Pour in the vegetable broth and bring to a simmer. Stir in the curry powder, soy sauce, and honey. Allow the mixture to simmer for about 15-20 minutes or until the vegetables are tender.

Serving the Dish

    Slice the cooked tonkatsu into strips and serve over rice. Ladle the curry sauce over the tonkatsu and rice.
