Season the pork loin chops with salt and black pepper on both sides. Let them sit for about 15 minutes to absorb the flavor.

Set up a breading station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs.

Dredge each pork chop in flour, shaking off excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
Cooking the Tonkatsu

In a large frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread; it should sizzle immediately.

Carefully add the breaded pork chops to the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 5-6 minutes on each side until golden brown and cooked through.

Once cooked, transfer the tonkatsu to a paper towel-lined plate to drain any excess oil. Let them rest for a few minutes before slicing.
