Prepare the Vegetables and Tofu

    Prepare Tofu

    Drain the firm tofu and wrap it in a clean kitchen towel. Place a heavy object on top to press out excess moisture for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

    Prepare Vegetables

    Wash and peel the zucchini and carrot. Cut the zucchini into thin rounds, the carrot into thin sticks, and the bell pepper into strips. Set aside all the cut vegetables in a bowl.

    Blanch Broccoli

    In a pot of boiling water, blanch the broccoli florets for 2 minutes until bright green, then transfer to an ice bath to stop cooking. Drain and set aside.

Make the Tempura Batter

    Combine Dry Ingredients

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, and baking soda until evenly mixed.

    Add Wet Ingredients

    Make a well in the center of the dry ingredients and add the ice-cold water and the egg. Mix gently until just combined; do not overmix. The batter should be lumpy.

Fry the Tempura

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil temperature by dropping a small amount of batter into the oil; it should sizzle and float to the surface.

    Fry Tofu and Vegetables

    Dip the tofu cubes and prepared vegetables into the tempura batter, allowing excess batter to drip off. Carefully place them into the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Prepare the Dipping Sauce

    In a small bowl, whisk together the soy sauce, mirin, grated ginger, and sliced green onions. Adjust the seasoning as needed.
