Method

Ravioli Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into this well. Add the olive oil.

    Mix and Knead

    Using a fork, gently whisk the eggs and oil, gradually incorporating the flour. Once combined, knead the dough on a lightly floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Cheese Filling

    Mix the Cheese Filling

    In a bowl, combine the ricotta, mozzarella, parmesan, chopped fresh basil, minced garlic, and salt. Mix until well combined and set aside.

Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Make the Sauce

    Add the crushed tomatoes, oregano, salt, and black pepper. Stir to combine and let it simmer for 20 minutes. Stir in the fresh basil before serving.

Garlic Bread

    Prepare the Garlic Butter

    In a small bowl, mix softened butter with minced garlic and chopped parsley.

    Toast the Bread

    Slice the baguette in half lengthwise and spread the garlic butter evenly on both sides. Place under the broiler for 2-3 minutes until golden brown.

Combine and Serve

    Assemble the Ravioli

    Roll out the rested dough into thin sheets. Use a ravioli cutter or knife to cut into squares. Place a small spoonful of the cheese filling in the center of each square and fold over to create a pocket. Seal the edges with a fork.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli, top with marinara sauce, and serve with garlic bread on the side.
