Preparation of Rice

    Cook the Rice

    Rinse 2 cups of white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Preparing the Spam

    Slice and Cook Spam

    Open the can of Spam and slice it into ½-inch thick pieces. Heat a non-stick skillet over medium heat. Add the Spam slices and cook for about 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.

Making the Sauce

    Prepare Teriyaki Sauce

    In the same skillet used for the Spam, add 2 tablespoons of sesame oil. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant. Then pour in 1 cup of teriyaki sauce and let it simmer for 3-4 minutes, allowing it to thicken slightly.

Cooking the Eggs

    Fry the Eggs

    In another skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with a pinch of salt.

Assembling the Loco Plate

    Plate the Dish

    On a large plate, place a generous scoop of the cooked white rice. Top it with the crispy Spam slices. Drizzle the teriyaki sauce over the Spam. Add the fried eggs on top. Garnish with chopped green onions, black sesame seeds, nori sheets cut into strips, pickled ginger, and a drizzle of Sriracha sauce to taste.
