Prepare Sushi Rice

Rinse and Cook
Rinse the sushi rice under cold water until the water runs clear, then drain. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed.

Season the Rice
Once the rice is cooked, remove from heat and let it sit for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice with a wooden spatula, being careful not to mash the grains.

Slice the Fish
Using a sharp knife, cut the fresh Ahi tuna into thin strips, about 1/4 inch thick.

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Add Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to form a tight roll. Seal the edge of the nori with a little water.

With a sharp knife, cut the roll into 6 equal pieces. Sprinkle with black sesame seeds and serve with soy sauce and wasabi on the side.
