Preparation of Ingredients

Slice the Meat
Thinly slice the beef or chicken into bite-sized pieces. If using beef, choose marbled cuts for tenderness.

Prepare the Vegetables
Chop the napa cabbage into strips, slice the shiitake mushrooms, cut the green onions into 2-inch pieces, julienne the carrot, and cut the tofu into cubes.
Cooking the Sukiyaki

Prepare the Broth
In a large skillet or shallow pot, combine the soy sauce, mirin, sake, sugar, and dashi stock. Bring to a simmer over medium heat.

Cook the Meat
Add the sliced beef or chicken to the simmering broth. Cook until the meat is just cooked through, about 3-5 minutes.

Add Vegetables and Tofu
Add the napa cabbage, shiitake mushrooms, green onions, carrot, and tofu to the pot. Let everything simmer together for another 5-7 minutes until the vegetables are tender.
