Method
Prepare Sushi Rice

Rinse the Rice
In a fine-mesh sieve, rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. Fluff the rice with a fork and gently mix in the vinegar mixture.
Prepare the Poke Bowl

Marinate the Tuna
In a bowl, combine diced Ahi tuna, soy sauce, and sriracha sauce. Toss to coat and let it marinate for about 10 minutes.

Assemble the Bowl
In a bowl, add a serving of the seasoned sushi rice as the base. Top with marinated tuna, avocado slices, cucumber, and radish. Sprinkle with furikake seasoning.
Make the Sweet Wasabi Aioli

Combine Ingredients
In a small bowl, whisk together mayonnaise, wasabi paste, honey, lemon juice, and salt until smooth and well combined.

Serve
Drizzle the sweet wasabi aioli over the assembled poke bowl or serve it on the side for dipping.
