Sushi Rice Preparation

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker instructions until the rice is tender and water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Ahi Poke Preparation

    Prepare the Ahi Poke

    Cut the ahi tuna into small cubes and place it in a mixing bowl. Add soy sauce, sriracha, sesame oil, and chopped green onions. Mix well to combine. If desired, add masago for extra flavor.

Temaki Assembly

    Prepare the Nori Sheet

    Take a nori sheet and place it on a clean, flat surface, shiny side down.

    Add Sushi Rice

    With wet hands, take about 1/4 cup of sushi rice and spread it on one side of the nori sheet, covering about 1/3 of the sheet.

    Add Fillings

    Place a portion of the prepared ahi poke filling on top of the rice, followed by a few slices of avocado and julienned cucumber.

    Roll the Temaki

    Starting from the rice side, roll the nori sheet to form a cone shape, enclosing the fillings. Seal the edge with a little water if necessary.

    Garnish and Serve

    Sprinkle sesame seeds on top of the temaki for garnish. Serve immediately with additional soy sauce for dipping.
