Preparation of Meat

    Season the Beef

    In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub this seasoning mixture generously all over the beef brisket.

    Let it Rest

    Cover the seasoned brisket with plastic wrap and let it rest in the refrigerator for at least 1 hour, preferably overnight.

    Slice the Onions

    Peel and slice the yellow onions into thin rings.

    Sauté the Onions

    In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté for about 10 minutes until they are soft and translucent. Stir in balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.

Smoking Process

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Meat

    Place the seasoned brisket on the smoker rack and add the soaked wood chips to the smoker box. Smoke the brisket for about 4-5 hours, or until it reaches an internal temperature of 195°F (90°C), basting occasionally with any juices that accumulate.

    Once the brisket is done, remove it from the smoker and let it rest for 15 minutes. Slice it against the grain and serve it atop the sautéed onions.
