    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then drain them well.

    Soak Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to achieve a crispier texture.

    Season Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel. In a large bowl, combine the salt, black pepper, paprika, and garlic powder. Add the dried potatoes and toss until they are evenly coated with the seasoning.

    Heat Oil

    In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Fry Potatoes

    Carefully add a handful of the seasoned potato strips into the hot oil, making sure not to overcrowd the pot. Fry them for about 4-5 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the fries and transfer them to a plate lined with paper towels to absorb excess oil.

    Continue frying the remaining potato strips in batches, allowing the oil to return to temperature between each batch.
