Cook the Linguini
In a large pot of boiling salted water, add the linguini. Cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain and set aside.

Sauté the Shrimp
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the rock shrimp and cook for 3-4 minutes until they turn pink and opaque. Season with salt and black pepper. Remove the shrimp from the skillet and set aside.

Prepare the Sauce
In the same skillet, add the white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes to reduce slightly. Then, add the chopped sundried tomatoes and heavy cream. Stir to combine and let simmer for another 3-4 minutes until the sauce thickens.

Serve
Serve the shrimp scampi hot, garnished with freshly chopped parsley. Enjoy your meal!
