Prepare the Shrimp
In a bowl, rinse the shrimp under cold water and pat them dry with paper towels. Set aside.
Tempura Batter

Make Tempura Batter
In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, and 1 tsp of baking powder. Gradually add 1 cup of cold water while whisking until smooth. Add ice cubes to keep the batter cold.
Panko Coating

Prepare Panko Coating
In one bowl, place 1 cup of all-purpose flour mixed with 1 tsp of salt and 1 tsp of pepper. In another bowl, beat 1 egg. In a third bowl, place 1 cup of panko breadcrumbs.
Frying

Heat Oil
In a deep frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Tempura Shrimp
Dip each shrimp into the tempura batter, letting the excess drip off, then carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Fry Panko Shrimp
For panko shrimp, first coat each shrimp in the flour mixture, then dip in the beaten egg, and finally coat with panko breadcrumbs. Fry in the same oil until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Dipping Sauce

Prepare Dipping Sauce
In a small bowl, mix together 1 cup of soy sauce, 2 tbs of honey, 1 tsp of sesame oil, 1 tbs of rice vinegar, and 1 tsp of chili flakes until well combined.
