Preparation

    Prepare the Pork

    Trim any excess fat from the pork shoulder and cut it into large chunks (about 2-3 inches).

    Mix the Marinade

    In a large bowl, combine soy sauce, water, brown sugar, grated ginger, minced garlic, and sesame oil. Stir until the sugar is dissolved.

Cooking

    Marinate the Pork

    Add the pork shoulder chunks to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    In a large pot or Dutch oven, heat 1 tablespoon of oil over medium heat. Remove the pork from the marinade and brown it on all sides, about 5-7 minutes.

    Simmer

    Once browned, pour the marinade over the pork in the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 2 to 2.5 hours, or until the pork is tender and easily shreds with a fork.

Serving

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot to soak up the sauce.
