In a large bowl, combine the soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Stir well until the sugar is dissolved. Add the chicken thighs to the bowl, ensuring they are evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor.
