Tempura Battered Shiso-Wrapped Ahi

Prepare the Ahi Tuna
Cut the Ahi tuna steak into 1-inch strips. Wrap each strip with a shiso leaf.

Make the Tempura Batter
In a bowl, mix the tempura flour and cold water until just combined. Do not overmix; some lumps are okay.

Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C).

Fry the Wrapped Ahi
Dip each shiso-wrapped Ahi tuna strip into the tempura batter and carefully place it in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Pickling Liquid
In a saucepan, combine dashi stock, rice vinegar, sugar, and salt. Bring to a simmer, stirring until the sugar dissolves.

Pickle the Onions
Pour the hot pickling liquid over the sliced onions. Let sit for at least 30 minutes to allow flavors to develop.
Assembly

Plate the Shiso Bites
On a serving plate, arrange the fried shiso-wrapped Ahi. Top each piece with a spoonful of dashi pickled onions.

Add Toppings
Sprinkle bonito flakes and lemon zest over the assembled Shiso bites before serving.
