Preparation

    Prepare the Broth

    In a large pot, pour the dashi stock and bring it to a simmer over medium heat. Add soy sauce, mirin, salt, and pepper. Allow the broth to simmer gently for about 10 minutes to let the flavors combine.

    Prepare the Seafood and Vegetables

    While the broth is simmering, rinse all the seafood under cold water. Pat dry with paper towels. Prepare the vegetables by chopping the napa cabbage, slicing the carrots and shiitake mushrooms, and dicing the tofu.

Cooking

    Add Ingredients to the Broth

    Once the broth is ready, add the shrimp, scallops, white fish, and mussels to the pot. Allow them to cook for about 5-7 minutes until the seafood is cooked through and opaque.

    Add Vegetables and Tofu

    Next, add the napa cabbage, carrots, shiitake mushrooms, green onions, and tofu to the pot. Stir gently to combine and let everything cook for an additional 5 minutes until the vegetables are tender.

Serving

    Serve the Yosenabe

    Ladle the seafood and vegetable mixture into bowls. Drizzle a bit of sesame oil on top, and sprinkle chili flakes to taste for an added kick. Serve hot and enjoy!
