Sauteed Eggplant

Method

Preparation of Salmon

    Season the Salmon

    In a small bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this mixture over the salmon fillets on both sides.

    Cook the Salmon

    Preheat the broiler or a skillet over medium-high heat. If broiling, place the salmon on a broiler pan and broil for about 6-8 minutes per side or until cooked through. If sautéing, place salmon in the skillet and cook for about 4-5 minutes on each side until golden and flaky.

Preparation of Vegetable Tempura

    Prepare the Vegetables

    Wash and slice assorted vegetables into thin strips or bite-sized pieces.

    Make Tempura Batter

    In a bowl, combine tempura batter mix and cold water, stirring until just combined (do not overmix).

    Fry the Vegetables

    In a deep skillet or pot, heat vegetable oil over medium-high heat. Dip the sliced vegetables in the tempura batter and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Preparation of Sauteed Eggplant

    Slice the Eggplant

    Wash the eggplants and slice them into rounds or half-moons.

    Saute the Eggplant

    In a skillet, heat olive oil over medium heat. Add the sliced eggplant and season with salt and black pepper. Cook until tender and slightly caramelized, about 5-7 minutes.

Preparation of Cold Tofu

    Prepare the Tofu

    Drain the firm tofu and cut it into cubes or slices. Arrange on a serving plate.

    Dress the Tofu

    Drizzle soy sauce and sesame oil over the tofu. Sprinkle with sliced green onions for garnish.
