Prepare the Soup Base

Make the Broth
In a large pot, combine the chicken broth, soy sauce, mirin, minced garlic, and grated ginger. Bring the mixture to a boil over medium-high heat.

Simmer the Broth
Once boiling, reduce the heat and let the broth simmer for about 15 minutes to allow the flavors to meld together.

Add Green Onions
Add the chopped green onions to the pot and simmer for an additional 5 minutes.
Cook the Noodles and Toppings

Cook the Noodles
In a separate pot, bring water to a boil and cook the saimin noodles according to the package instructions, usually around 3-4 minutes until al dente. Drain and set aside.

Prepare the Eggs
Soft boil the eggs by placing them in boiling water for about 6-7 minutes. Remove and place in ice water for a few minutes before peeling.

Prepare the Toppings
Slice the char siu and kamaboko into thin pieces if not pre-sliced. Rinse the bean sprouts under cold water.
Assemble the Saimin

Combine Ingredients
In a large serving bowl, add a portion of the cooked noodles. Ladle the hot broth over the noodles.

Top the noodles with slices of char siu, kamaboko, soft-boiled eggs (cut in half), and a handful of bean sprouts.
