Make the Noodle Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms.

Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Noodles
After resting, roll out the dough to a thin sheet (about 1/16 inch thick) and cut it into thin strips to form the noodles.

Prepare the Broth
In a large pot, combine the chicken broth, soy sauce, mirin, ginger, and minced garlic. Bring to a boil over medium heat.

Reduce the heat and let the broth simmer for about 15 minutes to allow the flavors to meld. Remove the ginger slices before serving.
Assembling the Saimin

Cook the Noodles
In a separate pot of boiling water, cook the freshly made noodles for about 3-4 minutes until al dente. Drain and set aside.

In serving bowls, place a portion of noodles, ladle the hot broth over the noodles, and top with sliced char siu, chopped bok choy, soft-boiled eggs, and sliced green onions.
