Pork Roast Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Season the Pork

    In a small bowl, mix together salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Rub the pork loin with olive oil and then sprinkle the seasoning mixture evenly over the meat.

    Roast the Pork

    Place the seasoned pork loin in a roasting pan. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).

    Rest the Meat

    Remove the pork from the oven and let it rest for 10 minutes before slicing.

Gravy Preparation

    Prepare the Drippings

    After removing the pork, pour the drippings from the roasting pan into a measuring cup. Skim off excess fat if necessary until you have about 1 cup of drippings.

    Make the Roux

    In the same roasting pan, add the flour to the drippings and whisk until smooth. Place the pan on the stove over medium heat.

    Add Broth

    Gradually whisk in the chicken broth, stirring constantly to avoid lumps. Bring to a simmer and cook until the gravy thickens, about 5-7 minutes.

    Stir in salt, black pepper, and Worcestershire sauce. Adjust the seasoning to taste.
