Prepare the Marinade
In a bowl, combine soy sauce, brown sugar, ground black pepper, and salt. Mix well to create a marinade.

Marinate the Pork
Place the pork shoulder in a large resealable bag or a bowl. Add minced garlic and the marinade. Seal the bag or cover the bowl, and marinate in the refrigerator for at least 4 hours, preferably overnight.

Roast the Pork
Preheat your oven to 325°F (165°C). Remove the pork from the marinade and place it in a roasting pan. Pour water into the bottom of the pan and drizzle the pork with olive oil. Cover with foil and roast for 3 to 4 hours, until the internal temperature reaches 190°F (88°C). Remove the foil in the last 30 minutes to allow the pork to brown.
