Prepare the Roast Pork

Preheat the Oven
Preheat your oven to 300°F (150°C).

Season the Pork
In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture all over the pork shoulder.

Roast the Pork
Place the seasoned pork shoulder in a roasting pan. Drizzle apple cider vinegar and honey over the top. Cover with foil and roast for 3 hours, or until the pork is tender and can be easily shredded.

Remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks.

In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and water is absorbed. Fluff with a fork.

While the pork and rice are cooking, prepare the toppings. Rinse the black beans, halve the cherry tomatoes, and dice the avocado. Chop the fresh cilantro.
