Preparation of Base

    Mixing the Base

    In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk together until the sugar is fully dissolved and the mixture is smooth.

    Chill the Mixture

    Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 1 hour to chill. This will improve the texture of the ice cream.

Flavoring the Ice Cream

    Prepare the Fruit

    If using fresh pineapple, peel, core, and chop it into small chunks. For strawberries, wash them, remove the stems, and slice them if they are large. You can also blend them into a puree if desired.

    After the base mixture has chilled, divide it into two equal portions. In one portion, gently fold in the pineapple chunks, and in the other, fold in the strawberries. Make sure the fruit is evenly distributed.

Churning and Freezing
