Crust Preparation

    Make the Dough

    In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water.

    Chill the Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Dough

    After chilling, roll out the dough on a floured surface to fit your pie dish. Transfer it to the dish, trimming any excess.

    Pre-Bake Crust

    Preheat the oven to 375°F (190°C). Prick the bottom of the crust with a fork and bake for about 15 minutes until lightly golden.

Filling Preparation

    Mix the Filling

    In a large bowl, whisk together the canned pumpkin puree, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, ground ginger, and salt.

    Add the eggs and evaporated milk to the mixture and whisk until smooth and well combined.

    Fill the Crust

    Pour the pumpkin filling into the pre-baked pie crust, spreading it evenly.

    Bake in the preheated oven at 375°F (190°C) for 45-50 minutes, or until a knife inserted into the filling comes out clean.
