Marinate the Lamb Ribs
In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, black pepper, paprika, cayenne pepper, and lemon juice. Mix well to create a marinade.

Coat the Ribs
Add the lamb ribs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat. If using charcoal, allow the coals to turn white and ashy.

Grill the Ribs
Remove the ribs from the marinade and let any excess marinade drip off. Place the ribs on the grill, bone side down, and cook for about 15-20 minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium rare.

Once cooked, remove the ribs from the grill and let them rest for about 5 minutes before slicing. Serve hot with your favorite sides.
