Method

Cooking the Prime Rib

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Season the Prime Rib

    Generously season the prime rib with salt, black pepper, and garlic powder. Rub olive oil over the surface to help the seasoning adhere.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack in a baking pan. Roast in the preheated oven for 20 minutes.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour or until the internal temperature reaches your desired doneness (130°F (54°C) for medium-rare).

    Rest the Meat

    Remove the prime rib from the oven and let it rest for 15-20 minutes before slicing.

Making the Au Jus

    Combine Ingredients

    In a saucepan, combine the beef broth, red wine, Worcestershire sauce, and fresh thyme.

    Simmer

    Bring the mixture to a simmer over medium heat. Let it reduce slightly for about 10-15 minutes, stirring occasionally.

Preparing Creamy Horseradish

    Mix Ingredients

    In a bowl, combine prepared horseradish, sour cream, and fresh lemon juice. Mix until smooth and well combined.

Making Garlic Mashed Potatoes

    Boil Potatoes

    Peel and chop the potatoes into quarters. Place in a large pot of salted water and boil until tender, about 15-20 minutes.

    Cook Garlic

    In the last 5 minutes of boiling the potatoes, add peeled garlic cloves to the pot.

    Mash Potatoes

    Drain the potatoes and garlic. Return to the pot and add butter, milk, and salt. Mash until creamy and smooth.

Preparing Vegetables

    Prepare the Vegetables

    In a large mixing bowl, toss mixed vegetables with olive oil, salt, and black pepper.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet and roast in the oven alongside the prime rib for about 20-25 minutes, or until tender.
