    Marinate the Pork

    In a mixing bowl, combine ground pork, minced garlic, minced ginger, soy sauce, oyster sauce, sesame oil, black pepper, and cornstarch. Mix well until the pork is fully coated with the marinade. Let it marinate for at least 30 minutes.

Cooking the Vegetables

    Prepare the Vegetables

    While the pork is marinating, prepare the vegetables. Dice the eggplant, bell pepper, and onion into small pieces. Chop the green onions and set aside.

    Sauté the Vegetables

    In a large skillet or wok, heat 2 tablespoons of oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened. Then add the diced eggplant and cook for an additional 5-7 minutes, stirring occasionally, until the eggplant is tender.

Cooking the Pork

    Cook the Marinated Pork

    Once the vegetables are cooked, push them to the sides of the skillet, creating a well in the center. Add the marinated pork to the center of the skillet and cook for 5-7 minutes, breaking it apart with a spatula until it is no longer pink.

    In a small bowl, mix together chicken broth, sugar, and rice vinegar. Pour this mixture over the pork and vegetables. Stir well to combine everything together and let it simmer for another 3-5 minutes until the sauce thickens slightly.

    Remove the skillet from the heat. Sprinkle the chopped green onions over the top of the dish. Serve hot with steamed rice or noodles.
