    Slice the pork chops into thin strips. Chop the bell pepper, onion, carrots, and celery into bite-sized pieces. Mince the garlic cloves.

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced pork chops and cook until browned, about 4-5 minutes. Remove from the skillet and set aside.
