    Prepare the Pork

    Cut the pork belly into large chunks, about 2 inches each. This will help the meat absorb the marinade.

    Marinate the Pork

    In a large bowl, combine soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Add the pork belly chunks and marinate for at least 30 minutes, preferably overnight in the refrigerator.

    Sauté the Onions

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced onions and sauté until they are translucent, about 5 minutes.

    Brown the Pork

    Remove the pork from the marinade (reserve the marinade) and add the pork to the pot. Sear the pork on all sides until browned, about 10 minutes.

    Add Marinade and Water

    Pour the reserved marinade and water into the pot. Stir well to combine and bring to a boil.

    Simmer the Adobo

    Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the pork is tender. Stir occasionally and add more water if necessary to prevent burning.

    Serve the Dish

    Once the pork is tender, taste and adjust seasoning if needed. Serve the Pork Adobo hot over steamed rice and garnish with chopped green onions.
