Prepare the Pork
Cut the pork shoulder into 1-inch cubes and season with salt. Set aside.

Prepare the Rice
Rinse the white rice under cold water until the water runs clear. Drain and set aside.

Mince the garlic and slice the green onions, separating the white parts from the green.
Cooking

Sauté Aromatics
In a large pot, heat sesame oil over medium heat. Add the minced garlic and the white parts of the green onions. Sauté until fragrant, about 1-2 minutes.

Brown the Pork
Add the cubed pork shoulder to the pot and brown on all sides, about 5-7 minutes.

Pour in the soy sauce, vinegar, and water. Add the bay leaves, black peppercorns, and brown sugar. Stir well to combine.

Simmer the Adobo
Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1 hour, stirring occasionally, until the pork is tender.

In a separate pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and cook for about 18-20 minutes, or until the rice is tender and water is absorbed.

Once the pork is tender, taste and adjust seasoning if necessary. Serve the adobo over a bed of rice and garnish with the green parts of the green onions.
