    Prepare the Pork

    Cut the pork shoulder into large chunks, about 2 inches each. This will help the meat cook evenly.

    Marinate the Pork

    In a large bowl, combine the pork chunks, soy sauce, vinegar, crushed garlic cloves, bay leaves, and black peppercorns. Mix well to ensure the pork is coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

    Sauté Optional Ingredients

    If using, finely chop the onion and green bell pepper. In a large pot, heat a tablespoon of oil over medium heat. Add the onion and bell pepper, and sauté until softened, about 5 minutes.

    Add Marinated Pork

    Remove the marinated pork from the refrigerator. Add the marinated pork pieces (including the marinade) to the pot with the sautéed vegetables. Stir to combine.

    Simmer

    Pour in the water, bringing the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the pork is tender and the sauce has thickened, stirring occasionally.

    Add Hard-Boiled Eggs (Optional)

    If using, peel the hard-boiled eggs and add them to the pot during the last 10 minutes of cooking, allowing them to absorb some of the sauce.
