    Prepare the Ingredients

    Start by chopping the Chinese cabbage and slicing the onion thinly. Cut the chicken thighs into bite-sized pieces.

    Sauté the Base

    In a large skillet or frying pan, heat a tablespoon of oil over medium heat. Add the sliced onion and sauté until translucent.

    Cook the Chicken

    Add the chicken pieces to the skillet and cook until they are browned and cooked through, about 5-7 minutes.

    Add the Cabbage

    Add the chopped Chinese cabbage to the skillet and stir-fry for another 2-3 minutes until the cabbage wilts.

    Prepare the Sauce

    In a bowl, mix together the soy sauce, mirin, dashi stock, sugar, and salt. Pour this mixture over the chicken and cabbage in the skillet.

    Simmer

    Lower the heat to medium-low and let the mixture simmer for about 5 minutes, allowing the flavors to meld.

    Add the Eggs

    In a separate bowl, beat the eggs. Pour the beaten eggs over the chicken and cabbage mixture in the skillet. Cover and let cook for about 3-4 minutes until the eggs are set but still slightly runny.

Serving

    Scoop the cooked rice into bowls. Top with the chicken and egg mixture from the skillet.
