Gather all the ingredients and ensure the cooked rice is cold (preferably a day old) to prevent clumping.

Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet, scramble until fully cooked, then remove and set aside.

Cook the Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add the diced carrots and sauté for 2-3 minutes until they begin to soften. Then add the green peas and cook for another 2 minutes.

Add the cold cooked rice to the skillet with the vegetables, breaking up any clumps. Stir-fry for 3-5 minutes, allowing the rice to heat through and absorb the flavors.

Pour the soy sauce and sesame oil over the rice mixture. Add salt and black pepper to taste. Stir well to combine.
