    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on a paper towel to drain excess fat. Once cooled, chop into small pieces.

    Prepare the Vegetables

    In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Then, add the diced tomato and cook for an additional 2 minutes. Remove from heat and set aside.

    Beat the Eggs

    In a bowl, crack the eggs and add salt and black pepper. Whisk until well combined.

    Cook the Omelet

    In the same skillet, add olive oil and heat over medium-low heat. Pour in the beaten eggs and let them cook undisturbed for about 2 minutes until the edges start to set.

    Add Filling

    Once the eggs are partially set, sprinkle the cooked bacon, sautéed onions, diced tomatoes, and cheddar cheese over one half of the omelet.

    Fold and Finish Cooking

    Using a spatula, carefully fold the omelet in half over the filling. Cook for another minute or until the cheese is melted and the eggs are fully cooked.

    Serve

    Slide the omelet onto a plate. Serve with toasted bread on the side.
