Prepare the filling
Peel the ripe bananas and mash them in a bowl until smooth. Stir in the brown sugar and cinnamon until well combined. If using cheese, mix it in as well.

Prepare the wrappers
Lay a spring roll wrapper on a clean surface or cutting board. Make sure the pointed end is facing you.

Fill the wrappers
Spoon about 2 tablespoons of the banana mixture onto the lower third of the wrapper. Fold the sides over the filling and roll it up tightly, sealing the top edge with a little water.

Continue to fill and roll the remaining wrappers until all the filling is used.

In a deep frying pan, heat the cooking oil over medium-high heat until hot but not smoking.
