Method

Grilling the Steak

    Prepare the Marinade

    In a bowl, mix together olive oil, soy sauce, minced garlic, black pepper, and salt. Place the flank or sirloin steak in the marinade and let it sit for at least 30 minutes, preferably up to 2 hours.

    Grill the Steak

    Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side for medium-rare, or to your desired doneness. Once grilled, let it rest for 5 minutes before slicing.

Cooking the Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes or until the water is absorbed. Remove from heat.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently. Let it cool slightly.

Assembling the Poke Bowl

    Prepare the Toppings

    Slice the cucumber, avocado, and radishes. Chop the scallions. Prepare the nori sheets by slicing them into strips.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, sriracha, sesame oil, and lime juice.

    Assemble the Bowl

    In a bowl, layer the sushi rice as the base. Top with sliced grilled steak, cucumber, avocado, radishes, scallions, and nori strips. Drizzle with the sauce and sprinkle sesame seeds on top.
