Noodle Preparation

Cook Saimin Noodles
In a pot of boiling water, cook the saimin noodles according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.

Prepare Pork
In a separate pot, bring water to a boil. Add the pork belly and cook for about 20-25 minutes until tender. Remove and let cool before slicing into thin pieces.

Prepare Broth
In a large pot, combine the chicken broth, soy sauce, mirin, salt, and black pepper. Bring to a simmer over medium heat.

Add Fish Cake
Slice the fish cake into thin rounds and add it to the broth. Simmer for about 5 minutes to heat through.

Prepare Green Onions
Thinly slice the green onions and set aside for garnish.
Assembly

Combine and Serve
In serving bowls, add a portion of the cooked saimin noodles. Ladle the hot broth with fish cake and slices of pork over the noodles. Top with a halved egg and sprinkle with green onions. Serve immediately.
